Gut Healing Meat Stock

You have probably heard about bone broth for gut health but have you heard about meat stock? 

 

What's the difference? 

Bone broth is made by simmering bones with little to no meat for long periods of time, like 12-24 hours. This releases great nutrients and the amino acid content increases with the longer cooking time.

 

Meat stock is made using meaty bones, like a full chicken, beef shank, or oxtail and a much short cook time, like 2-4 hours. 

 

This means bone broth does have more nutrients since its cooked longer, but it also means it can be harder to digest. For some people in early stages of healing their gut, or for those with histamine intolerance, bone broth can actually worsen symptoms. 

 

So, if you’re wanting to incorporate healing broth into your diet, but feel some uncomfortable symptoms when consuming bone broth, try meat stock!

Here’s how to do it:

 

  1. Choose a bone-in cut of meat. My favorite are a full chicken with chicken feet or oxtail
  2. Add the meat to a large pot, add some sea salt, add veggies like carrots, onion, garlic, and celery if you'd like.
  3. Cover with filtered water, bring to a boil, then lower the heat and simmer for a few hours (1-3 hours for chicken and 2-4 hours for beef).


You’re left with a delicious meat stock that is very gentle and easy to digest, while still have great nutrients that are great for gut healing !
